Crockpot Sweet Potato Stew
Use fire-roasted tomatoes: fire roasted tomatoes have such a great flavor and add a lot to this sweet potato stew. (My favorite brand is Muir Glen or Cento Marzano)
Beef bouillon: there are so many different options for beef bouillon; here are the exact cubes (affiliate) I use for this stew. You’ll want the big ones to ensure there is enough flavor!
Use fire-roasted corn: again, great flavor here! If you don’t have access, use frozen corn instead (no need to thaw).
Pick good sweet potatoes: more on this below. Also, check out this roasted sweet potatoes post to see how I like to cut sweet potatoes. Recipe HERE
Sweet Potato Curry With Spinach
This delicious curry with spinach is currently my favorite vegan dinner meal because:
It’s so comforting, flavorful, and delicious.
This vegan dinner is healthy, rich in vitamins, minerals, and fiber.
It’s quick and easy and can be made in an Instant Pot (pressure cooker) or on the stovetop. There are less than 10 steps involved to make this creamy sweet potato curry. If you want to serve the curry with rice, cook the rice first. Then chop the sweet potatoes, the onion, mince the garlic cloves, and the fresh ginger. Prepare all your spices and the remaining ingredients. Recipe  HERE

Sweet Potato Hash Browns
Unlike regular hash browns, sweet potato hash browns are really tricky to get crispy, purely for the fact they’re packed with more moisture/starch than regular potatoes. However, just like my crispy sweet potato fries, where there’s a will, there’s a way.
Removing Starch
Starch is what makes the hash brown go gloopy and soft in the centre. In order to reduce this, it’s best to soak your shredded sweet potato in cold water beforehand.
After, you want to get all that water out of the potato. You want the shreds to be as dry as physically possible to allow them to get crispy. Recipe HERE
Chipotle Gouda Scalloped Sweet Potatoes
If you’re looking for something a little new and different to make for the holidays, serve as a side dish for dinner, or even brunch, then I’ve got the recipe for you.
These cheesy scalloped sweet potatoes are made with a lightened up gouda cheese and chipotle chile sauce for a hint of heat and smoky flavor. Recipe HERE
